The first step in making carrot cakes is to gather all the ingredients that you would need. They include the following:
- Chopped pecans (2 cups)
- Dark-brown sugar (1 and 1/2 cups)
- Granulated sugar (1/2 cups)
- Vegetable oil (1 cup)
- Eggs (4)
- Smooth unsweetened applesauce (3/4)
- Pure vanilla extract (1 teaspoon)
- Flour (2 and 1/2 cups)
- Baking soda (1 teaspoon)
- Baking powder (2 teaspoons)
- Salt (1/2 teaspoons)
- Ground cinnamon (1 and 1/2 teaspoons)
- Ground ginger (1 teaspoon)
- Ground nutmeg (1/4 teaspoon)
- Ground cloves (1/4 teaspoon)
- Grated carrots (2 cups of about 4 large carrots)
Now that you’ve gathered all the ingredients, we can move on to the next step.
Step 1: Firstly, preheat your oven to about 300 °F and line the inside with an adequate silicone baking mat or parchment paper. Then spread the diced pecans on the mat and allow to toast for about 8 minutes. Remove the pecans and allow them to cool for about 10 to 15 minutes.
Step 2: Turn up the heat in your oven to about 350 °F and grease your cake pans (for this article, we used a size of 9 inches). Also, grease the parchment paper or silicone baking mat too. Doing this helps the cake come off easily, after baking.
Step 3: Go ahead to mix the brown sugar, vanilla, granulated sugar, eggs, oil, and apple sauce in a bow and whisk till it is smooth. Also in a separate bowl, mix the flour, baking powder, baking soda, nutmeg, ginger, cinnamon, salt and cloves together. Then, pour in the wet ingredients which you just made, to the dry one and mix until they combine well. Lastly, throw in the carrots and a cup of toasted pecans.
Step 4: Distribute the batter mixture into your cake pans and bake for some time, depending on the number of pans you’re using. If three pans, bake for 20 to 25 minutes and about 30 to 35 minutes if using two pans. Simply test the center of the cake with a toothpick and if the toothpick comes out clean, the cakes are done. Finally, allow the cakes to cool completely,
Decorate with your preferred frosting
